Salsarita's Fresh Cantina will open its doors Feb. 19 at its new location next to Starbucks on Berkeley Boulevard.
General manager Greg Thering, along with franchise owner Mike Milligan, said Salsarita's Fresh Cantina is known for its "hot, healthy and fresh Mexican food." The new location is the company's 14th in North Carolina.
Salsarita's operates in an assembly line, allowing customers to select their ingredients and watch as a Salsarita's associate builds their meal. The menu boasts nearly every Mexican favorite including tacos, burritos, quesadillas, nachos and salads.
The restaurant serves a variety of traditional and healthy alternatives including grilled steak or shrimp, taco beef, pork and seasoned chicken.
Toppings include traditional lettuce, cheese and tomatoes to items like cilantro, grilled veggies and roasted red pepper sour cream.
Salsarita's makes its own tortilla chips that can be paired with fresh guacamole, traditional queso or Salsarita's hot, medium and mild salsas.
The restaurant also promises speedy service.
Thering said the restaurant's decor is modern and Mexican, with burnished maple tables, modern light fixtures and a large mural of the Old Southwest.
"Salsarita's is not your typical Mexican restaurant", Thering said. "The menu has a full selection of made-to-order items for every appetite. You can eat a huge cheesy burrito or decide on a healthy salad. Customers can leave our restaurant completely stuffed or happy that they stuck to their diet. It's their choice."
Salsarita's is an upscale Fresh-Mex restaurant chain headquartered in Charlotte, with restaurants across the U.S., mostly in the Southeast, but as far west as Texas.
Salsarita's hours of operation will be Monday through Saturday from 11 a.m. to 9 p.m. and on Sunday from 11 a.m. to 8 p.m.
