The former Bailey's Jewelry store at Berkeley Commons is being turned into Goldsboro's new restaurant -- Jimmy John's Gourmet Sandwiches.
Renovations began Monday on the former location of Bailey's Jewelry in the Berkeley Commons shopping center off Berkeley Boulevard to make room for a new sub shop in Goldsboro.
Jimmy John's Gourmet Sandwiches will bring 30 to 40 jobs to the area to start, said Frankie Warren, owner of the proposed Goldsboro Jimmy John's franchise.
The projected opening for the restaurant will be June 4, but it might have to be pushed back to June 11 depending on construction progress. The company requires a Tuesday start date for inventory purposes.
"It's a seven-week turn around on the location so that is pretty good, we got all the permits Friday," Warren said. "Right now we're just gutting all the walls, everything. I need a clear area with only sheet rock walls."
Warren chose Jimmy John's because it is one of the fastest-growing sandwich shops right now and he likes the company's business model of fresh meats and vegetables and how the general manager handles the prep work in the restaurant.
Warren doesn't plan to stop with one Jimmy John's. He is considering another in Goldsboro down the line, possibly near Wayne Memorial Drive, and more in surrounding towns depending on how he does with his first one.
